If most of your mail use is just inbound receiving, such as notifications and OTP codes then it gets pretty simple and deliverability / IP reputation means less. Can just use a ccTLD or whatever you choose, something out of the hands of the US. Then use a VPS you trust, use Mailcow for simplicity or something.
