I updated debian 10 to 11 but when I do the buster-backports I lose the ssh access and have to re-provision.
Also ihostart.micronode.uk is not loading up for me so I'm out of luck

I have experienced this backports issue (you do mean bullseye-backports, don't you?) in the past with other VPS providers on OpenVZ 7. Everything was fine after apt upgrade until the next reboot (could've been days later, this ain't Windows) and then the networking was borked. I never found out what was causing it though. But thanks for the reminder not to do this on one of these VPS.

Maybe you should install ssh instead of dropbear, I can't think of anything else being affected by the bullseye backports.

i think, its normal because the payment system is not automated. i mistakly paid twice due to that.
