Dropbear-initramfs on Debian-based or Dracut on Rhel. Dropbear-initramfs works well with Luks2 + EXT4 and ZFS with native encryption. You need to set up the network parameters in Grub and initramfs and after the reboot, connect on SSH, provide the unlock password and system will complete the boot process.
I've been using it since 2022 when I ordered my Kimsufi dedi. Works well.
And as OVH not provide this feature with installer from the panel, easiest way to use encrypted disks is boot to rescue and bootstrap a new Debian installation.
You can also copy https://github.com/netbootxyz/netboot.xyz to the EFI partition and boot it from the UEFI menu.
Then you can run any distro's proper installer
