Also it's not so much a box issue, it's more that once I hit around a certain threshold on PPS the original devices just start to struggle and drop packets

Depends on product. As long as it has a spare ethernet port I don't mind. These small computers don't and cant without some rigging.
Though the 10500t actually has a thing I can buy to install a 10G port.
Not really sure but if you can do a WIFI m.2 slot to ethernet that universally works I can do that too.. not sure if that requires the OS to support or not

I bought the cheapest piece of crap I could find on ebay (something like this https://www.ebay.com.au/itm/365180871459 ) so honestly you get what you pay for
pretty sure i couldn't even get that badboy working in windows though which is usually the easiest of them all
