Servers - CentOS, Debian/Proxmox & Windows 08 R2 + 2012 R2.
Desktop - Windows 7 Pro.
EDIT - I voted CentOS as I probably have more active boxes running it.

Does CPanel only work on CentOS? Genuine question because I don't use CPanel.

Debian: production(usually for migration of websites from other hosts)

I've used Fedora, CentOS and Ubuntu (as desktop) before and found that my true love goes to Fedora (for both server and as desktop).

I use ubuntu for linux servers and 2012 r2 for windows servers
On dedis: ESXi + CentOS 6.5
On single OpenVZ or KVM VPSs : Centos 6.5
linux : centos , debian 7.x
Debian on three VPSs and CentOS on one VPS. Don't take this as expert advice - I use my VPSs mostly as learning tools.
I do not understand why Ubuntu is somewhat popular as a server OS, because it is derived from Debian. Ubuntu gets more frequent updates, but wouldn't that make the server less stable? Perhaps someone can explain the reasons they prefer Ubuntu over Debian.

Ubuntu is like the Mac OS of Linux. I originally stepped into the Linux flavors through it, then transferred into my now native envrinment, Debian. I believe that Ubuntu is so popular because it has the most friendly UI and has the most support software-compatibility wise.
