You missed the part stating "more or less depending on the specific payment method" if one were to use a transparent blockchain like bitcoin it would be very much public information if your wallet is associated with you in any way, and I am sorry to be the one to inform your credit card is not much better your payment providers sell your data to third parties, I am not worried about the company I am buying from in that case cash wouldn't help the situation much.
That comment was to make a point in regards to your question "Who's more nefarious, the one you see coming or the one you don't?" I am saying that you will not see your government (or someone else's) coming when they want to take your money, and the only way for them to know where to take it from is for people to be transparent and give all their payment data away by using cashless and transparent methods. If you cared about your privacy they would not know where to come and steal money, this applies to criminals as well pick your evil, without privacy you are not protected from it.

This is like saying if someone wanted to be watched by the store owner they would ask them install security cameras, no surveillance is a reactive counter to bad experience if a store never gets stolen from it wouldn't need cameras. For your information I work in cybersecurity and can tell you no one gives you budget to secure the network until something bad happens.
Its like asking why I look at someone when walking in public, maybe they have funny hair, maybe I like their jacket. its a public environment and if you look funny out of place people will pay attention to you. Exposing a service on WAN is like walking in public if you don't treat it that way then your probably someone who stands out with messy hair sleeping pajamas on the internet this would be like exposing a MongoDB service that's not great and it might stay like that unless someone can contact the admin before a bad actor stumbles upon this and risks the security of all those users. You seem to have missed the fact that many of the biggest databases exposed online are due to miss configured services and they were only patched and known to the affected users because some security researchers was doing a internet scan and could warn the company and or tell the media about it.
If you think being observant when out for a walk or being protective of ones home are red flags then sure.
