Bold of you to assume I utilize a phone.
Saying that AOSP or IOS or "any other system" logs all activity is just wrong in so many respects I barley know how to respond so I will instead ask you to clarify how modifiable and mutable systems can be assumed to log "everything" even when you compiled your own Android ROM to disable all logging, or jail-broken your iPhone to do the equivalent or have external systems like firewalls to block any and all telemetry endpoints whitelisting only necessary services, as for the all other systems part... maybe you have not heard about Linux?
and your saying that just because someone is monitored that someone should not be concerned by that fact? in other words your logic is as such that if a bear rushes toward someone that someone should not be concerned about it and go inside the house since its already rushing toward you? being concerned about a bear is something you only do when sitting safe at home? just because the threat is not immediately clear people like you seem to completely disregard privacy and security only thinking about it when its to late.
Same with a lot of there server providers here few care about client communication security until they have been breached and the clear text chat logs are being used to further the attack, even then many will just stick their head in the sand.

Not to further derail your topic, but some governments outlawed "strong cryptography" or VPN services (I consider both to be privacy-related), so technically it actually can be considered as something illegal depending on jurisdiction
