You can have the /64 on the server and a /127 for example on the tunnel. server side ::2 and client side ::3 for example. Works perfectly fine... no need for any weird routing or configs. Just as long as the prefixes INSIDE the wireguard config are smaller than the one on server and doesn't include ones on server.
