does it really matter? it's not hard to imagine some providers infer your information from your billing details (which you need to provide in order to pay using fiat) and store them in the database, even if they dont explicitly ask for it when registering
There's always a risk. But I trust that hosting providers who are conscientious enough to modify WHMCS (or other client management system) to minimize data collection in the first place will be less likely to pull that kind of trick.

We don't verify your information, but if you pay with Credit Card, they probably will ask for KYC in Payment Gateway, always pay with Crypto. Of course you can pay with credit card etc.
But we just need a valid email. The rest we don't care.

You are not obliged to submit real data such as your name, but a valid email address is required.
Of course, you can use a temporary or masked one, but if you lose access to the email, it's (obviously) not our responsibility.
If you already know how anti-fraud systems and filters work, you'll already have an idea of how they work.

Litecoin is great but it's not a privacy coin. It's transparent just like bitcoin. MWEB is a great step though.
Most payment facilitators will pass the billing address directly on to the merchant. Is your threat model more just to avoid leaks from breaches - because this won't obscure it from the provider (or necessarily even WHMCS depending on the gateway module)?

This'll probably work for your intended purpose in most cases. Some providers use some forms of anti fraud system which will map your account and card address at some point. If you pass 3DS then you probably won't have much of an issue.
My approach for the above (I do not trust most internet companies as far as I can throw them) is I have rented some form of additional address (virtual office/co-working space/whatever) which I can use as a shield for everything. I have a card here which is exclusively used for this purpose.
I appreciate @naptha mentioning SporeStack. Kyun, I think is also token based, and it's cheaper than SporeStack. I've never used it, but I'm sure Kyun is worth checking out.
No KYC for Slow Servers, but it's IPv6 only and pretty niche. Monero, Bitcoin, or Bitcoin Cash (of those, definitely use Monero!) If you absolutely wanted to, you could send cash to the PO Box.
