otherwise it can ( and sooner or later will ) explode right in your face...
I have 0 out of 3 requirements, so now I will run it in my homelab and blame you if anything goes wrong thanks

Memory and Hard disk utilisation were 90% 20min before.

ceph is great.
imagine if this were a RAID failure - you'd be facing a nightmare without backups.
and PH/PH24 did a great job on getting everything back online, considering complexity of the issue.

We install a single NVMe in each server.
No Ceph, no Ceph explosion in our face.
No RAID, no RAID failure without backups.
And that single NVMe promises to never gonna give you up and never let you down?
