Actually, how does the Syncthing client pick a relay anyway? I assume it might just be based on latency or something.

Yeah, you can explicitly set one. That one I was aware of, I was more interested in the specifics for how it picks one from the relay pool.
I decided to use this new technology called a "search engine" - Anyway, it seems it does do latency checks, but groups them into 50 ms "buckets". Then it just picks random ones from the lowest bucket: https://forum.syncthing.net/t/how-does-syncthing-choose-a-relay/16129/2
So I guess when my phone connects to a relay, it can practically be anywhere in Central Europe.
