it's all encrypted end to end, it's pretty similar to operating a tor relay, accepted by most providers now aslong as it's not an exit point
Arguably it is an exit point? The purpose of it is for allowing it to work behind NAT, I am just not sure whether I will get myself in trouble

I've been probably running Syncthing Relays for around a year, with so far no issues. I don't think there's any risk. Connections are simply a bridge between A-to-B (as you say, intended to help users behind NAT) and encrypted between A and B. The relay itself isn't able to see any of that data.

All my compose files are in separate sub-directories anyway, so I just keep it fairly generic.I believe Syncthing documentation recommends running it on port 443, but typically that's occupied by whatever service I run under HTTPS on my nodes, so I stick to the default of 22067: https://docs.syncthing.net/users/strelaysrv.html#running-on-port-443-as-an-unprivileged-user
