Anyone know which folders I should add to the backups for NGINX, MYSQL, PHP server? Would /var alone be fine?

The defaults paths are usually under var (/var/www/* and /var/lib/mysql) though don't forget to also backup the config files within /etc.
Though for the DB, it would probably be best to use mysqldump though it could take a long time if it's a large DB.
Sounds good, offloading to where though? incremental backups require a lot of storage.

What he said, you can create a cron to dump the DBs periodically in a folder you can sync for backup.
For now, locally. Haven't yet decided of another home for it. Anyways, I am only gonna retain 4 of daily backups. So, I guess that's fine.
Well yeah, it will be fine, but I always have a backup for the backup and now I am thinking of getting a few HDDs to set up a raid array at Homelab for the local copy of backups as well, talk about costly...

I was planning to build a home server with two old hard drives connected to my Android box using an externally powered SATA dock that supports two drives. You could also try using the Pi board you introduced me to yesterday.

I won't be using an hungry CPU at all if intended for storage, will be fine with 4300g or 4600g tuned down to 35-45W, and it's enough for a storage server with raid i guess, i guessing the total TDP for this won't be crossing 250w at all, and if i replace the processor with 4300ge or 4600ge i can further reduce the chomping down power to let's say 200w as for system i think i will go with truenas or unraid depending on the budget, as for android connected storage i can do that as well since i already have a spare arm sbc module running dietpi, but it won't be something i can rely on as i will not only be setting up the storage for backup but for personal remote storage and backup service too, for photos and videos to dump data from my devices while i am sleeping, so for me raid looks like much more secure with running few instances of let's say docker images here and there.
