There's a number of potential issues one may run into. Video and AI use are definitely likely to be hampered by a BIOS that doesn't support the CPU fully, yes.
I've run both 4.24 and 4.27. For reasons I can not quantify, performance feels "better" in 4.27 though the main reason to upgrade to it from ASRock's notes is Resizable BAR. A 5700G shouldn't benefit much, if at all, from ReBAR support, so there's got to be something fundamentally "better" in it. And my motivation to rip apart ASRock BIOS images after some weeks of that rabbit hole is basically gone.
It's worth noting that general performance with the BIOS delivered on the box originally was mostly fine. If one has no need for the "G" features, and are just getting it because it's a good deal in general, they won't likely even notice that the platform support is slightly lacking out of the box.

Yeah, it took me several weeks to receive servers so hang in there!
I guess I have been spoiled with instant to 72 hour setup.
I have learned to be patient on LET over the years. I am unfazed by 2-3 month setup times now.
I would have forgotten my use case by the time I received the server.

Many chickens are being racked, cabled and built each and every day. We're slinging chickens as fast as humanly possible. Once these are caught up, we'll be releasing more instant deploy servers to inventory.
