The main thing I am looking for is that 200 GB SSD. SATA or SAS should be fine but I'm not 100% sure I don't need NVMe so I might have to cancel if SATA/SAS isn't fast enough.

Typically nvme can give 3-4GB/s throughput. 100Gbps = 12.5 GB/s
But I think you will saturate your CPU if you even attempt to push 10Gbps. If you do sftp file transfer for example you might reach 1-2Gbps

Also, I think no one offers 100 Gbps+ port speed with a VPS.
The budget for such spec may be laughable at first, but I just realized that I have a VDS from Crunchbits with 7GB RAM and 400 GB RAID 10 SSD for $7/month running smoothly in production. So you can check them out when there is stock.
