my main mailserver's current uptime:
15:22:49 up 108 days, 5:47"
The last mail server downtime was under 5 minutes in October for a reboot after a kernel upgrade, no network outages during this period. The server handles email for about 200 domains/websites. DNS is provided by our own DNS servers.
GoogleApps GMail downtime and outages over the same time period:

If you want something that's easy to setup and that will work you could follow these 2 tutorials to set everything up (postfix,dovecot, roundcube, Amavis, clamav, etc) and use ISPConfig's interface to manage the mailserver :
