Oh, and LVM everything except /boot. Well, maybe. I realised that I don't like having anything running on the host itself, so my root partition is around 10-15GB.
All I run on my Hetzner dedi is libvirt, wireguard and sshd (that's been firewalled down so it rejects all SSH except from a few whitelisted IPs and my internal wireguard subnets). I then just have a bunch of netfilter scripts to use iptables to forward services to the relevant VMs.
I wasn't disciplined enough with my first dedi, so as well as the VMs, it also has a massive LV for borg backup data and I use an account on there as my primary workspace. I really dislike this set-up, and I keep thinking of moving both to VMs, but I know it'll be painful. At least I can just pass through the existing LVM partition through as a second drive to the new borg VM when I do that.
Not sure about all the people running into problems with LVM to be honest. I ran the "unsupported way" of encrypted LVM for about 10 years on a laptop until it physically fell to pieces (so LVM inside of LUKS, rather than the recommended way the other way round). I've got the same setup on my Hetzner dedi and using LVM on several other linux machines over the years, and never had any problems except in the very early days when the standard rescue image didn't support both LUKS and LVM.

Currently 2, one OVH original KS-LE-1 and one Hetzner i9-9900k. I've had a couple of KS-1's over the years, and also all my Linux machines at home are setup with LVM as a matter of course, even if I'm not doing software RAID.

If you’re comfy with managing resizing/snapshots/etc, put each vm disk rawdogged into an lv
LVM everything (except ESP), unless you are encrypting then also excluding /boot
Consider 1.0 metadata raid 1 on unpartitioned disks, or raid10f2 with 64k-ish blocks - basic bitch raid 1 is the worst of both worlds as you have to manually duplicate ESP/partitions and have no extra performance to show for it

There is no reason not to LVM… pretty much what @ralf and @darkimmortal said. I’m always using LVM and it being the default for some distros should proof its widespread and reliability.
