Anything. That is one powerful server. You are rich. You can even host a community like this on something like that.
A more interesting question would have been about 68mb of RAM, not 768mb.
WordPress LiteSpeed / VPN / idle it.
Kubernetes cluster?
You can use the VPS as a development or testing server for web applications or software projects. Alternatively, you could set up a private file server for personal use.

Atlas probe.
Just give away it to someone else who really needs it like @Nyr did.
I was away actually so I wasn't there, I found out about it when someone talked about it in a discord server.

Also probably not a good idea to get a server from someone so desperate to make sales.
You could for example (probably in the awesome-selfhosted list) also host a smol doh/dot server via adguard home or unbound etc for personal use.

I have multiple 1core 1GB servers which I use for following purposes

Just for fun:
Other ideas than the ripe atlas probe: Make it a whoogle instance, make it host a discord bot, host a Yggdrasil node if it has ipv6.
What's the problem with having it public? I personally have only exposed dot/doh but I'm the only person using it (e.g. no bots). While there are some with plain port 53 dns, it's not that much.
