Billing will take care of it for you.
We can do one-off builds with in stock custom build hardware, but pricing won't be much better than the 32TB option. Those are already pretty aggressively priced. The 80TB models (currently) come with Ryzens (no guarantee of what's in the future).
Honestly I was also pretty tempted for the 80TB solution as well. I generate terrabytes of data and my current project requires about 50TB of storage just for the raw data generated by satellite and remote-sensed data sources. The actual processing and analysis will need more space probably in the hundreds.
Basically, looking forward to more storage offerings if/when my needs increase.
