The OS should be one you are comfortable using, and understand how to secure and administer.
The key with servers, for performance and security, is not to have any packages installed which you do not need. Usually, default installs of Debian/ Ubuntu or Cent all install a bunch of stuff you may never need.

This is really about who's package management system and policies you prefer. CentOS has the advantage that it's basically a re-spin of Red Hat (which is a very commercial linux distro!) however Ubuntu has the advantage that it's so easy to install most things.
