A few reason come to mind:
-) to login to my server with a know IP address even when i'm away from office
-) to have a secure, encrypted channel when i need to connect to my servers over a a wifi or other insecure network
-) to watch hulu when not in the states
-) to use tmux when i'm on a very bad connection so that even if i loose my wifi/3g coverage i can reconnect and reattach to my tmux session.
but a VPN is sometimes an overkill, and you just need a SSH tunnel.
