I don't trust Cloudflare (and I would want to use a non-cloudflare DNS)

Make sure set up your DNS records first according to the docs - https://mxroutedocs.com - and test propagation/SMTP with a tool like https://www.whatsmydns.net/ before you set your Nextcloud to use it
