Always encrypt. LUKS on a dedicated server is non negotiable if you care about data protection. Physical access to unencrypted disks is game over.

Yeah.. that's not a scenario disk encryption is supposed to help with. Once an attacker knows how to dump RAM and find the encryption key there, it is basically unencrypted.

We do apply some restriction/limitation like Disk I/O to keep server stable and well performing for all clients.
