Xen Xen and Xen

I am totally confused by the different flavors of Xen.
At Xenserver.org they have Xenserver which appears to be an open source version of the Citrix product.

At xenproject.org they have HVM and PV. From what I can see HVM is complete Hardware Virtualization and PV is more like Open VZ.

What are the differences between the projects? If HVM and Xenserver are both bare metal, which is better?
