I did tests from several locations and everything seems to go through goscomb.net which is the network they use for their UK location - I am wondering what the benefit of being in the France DC is if everything has to go through the UK ?

Yes, currently it goes (mostly) through either HE, NTT or UK - FRANCE-IX and the Paris exchange did not update their Routing tables yet which does not route local for now.
In around a week it should be there and all peers should accept the /24 announce and route direct.
Most traffic from Europe will go over UK anyway, since LINX routes are usualy one or 2 AS hops more near than France exchanges with the most ISPs not beeing present in France.
OVH in particular seems to have a very weird routing, using TATA instead of DECIX, LINX or AMSIX (despite we and them beeing present on all of them) - but that's another story.
@kbar Pricing is the same anywhere, we might add 1-2Euro for HK tho.

APNIC is out of IPs since over a year, so this is totally impossible
You could always go the Linode route, but I guess that's not cost efficient. They went with KDDI for the IPs too, heh.
