You should never trust a provider's claims. Use client-side encryption.

I'd recommend client-side encryption (via Borg, Duplicity, etc) and then just use whatever storage box is cheapest, without worrying about their privacy stance. If it's encrypted client-side (i.e. before it ever leaves your computer), they can log and snoop all they want but they won't find anything.

Fully agreed. Relying on the host to not snoop is extremely weak opsec. Even if the host doesn't look at your data, they can be compelled to hand it over to someone else.
Restic also worth mentioning along with Borg.
Just make sure to test recovery every once in a while.
