My experience of my college is just a few weeks now and it's size n=1 and it won't reflect on the overall condition of all Indian colleges in my opinion. There are just so many factors to consider in such a question that I am no expert about!
Regarding the hot topic of employability though, I must say that I might be witnessing a bit of change.
For the 2 weeks that I have been on campus, we actually had all our classes focused on the things that colleges usually miss out on. Say communication skills, leadership skills or mental maths or critical reasoning, group discussions (guestimates etc)
There are some reasons behind this change and I'd like to capture the nuance:
There are too many candidates and so companies are filtering on vibes, one of the teachers told us that people with 9 CGPA were actually underlined in the hiring process and the hiring process then involved around what did they miss to accomplish 9. It's weird but they are trying to find just about every way to filter you, some are even taking tests which are more like tests that you do for MBA course.
Our Aptitude test sir told us quite frankly that this test is not a test of aptitude but rather a test of question bank vs question bank. No matter how smart a person is, but he can't solve it better,faster than a less smarter person but with more idea around the whole thing. To be honest, I liked that he was honest about it as he asked us what we thought beforehand and many of us responded with the general sugar coated answers.
Also I feel like with AI, I notice that everyone is starting to think of engineers as more as project managers combined with sales and maybe that's whats getting filtered out nowadays in interview process.
I find this trend slightly disturbing as I feel like I am a nerd and although these don't go the best with my skills or my personality, I have a few years down the line to improve these skills. If this is what are the employability skills required, there is no harm in improving myself with accordance with that and I like the brutal honesty in that as well even if I feel like truth might be more nuanced.
It does feel like a lot of the things and projects that I used to do are starting to matter too.
Like this focus on extra-curricular and creating your own things and basically the things that I used to do at school level (perhaps even to a detriment degree) are the things that everyone is starting to admire a little more. I am seeing some of my friends really entrepreneurship-focused as well.
Tinkering as a hobby is starting to get insanely more preferable and dare I say cool. I became a rockstar in my friend circle when I created a tampermonkey script to do something that we needed to do.
To be honest, I wish to focus more on academic side of things as I have already done so many things and I know that I will continue to do so because I just love tinkering with computers.
I also think that I have made some good friends, and these friends are in many ways just like me and they even have so many qualities better than me which I admire and even incorporate the best of them. I'd like to absorb the best out of my friend circle.
So I am trying to read the second edition of C book by K&R and trying to focus a bit more on DSA and Algorithms personally. Share me some good programming book suggestions if you have some :-)

On contrary, I think some universities or countries has pedagogy that neglected deliverables as they're fixated on process maxxing. Group this, presentation that. What's even the purpose of a lecturer? That's why it's refreshing to see your college has rather balanced approach.
You should definitely start to figure out what you want to do next. Connect with people that aligns with your interest, learn from them, and make stuff.
Good programming book? The C by K&R is the gold standard. There's java, python, etc. But I don't think it's any better

I am learning Computer Engineering in my uni.
My course does teach me some hardware/embedded stuff as well but its mostly focused on CS

I would say that my college has many flaws as well which I didn't write in the comment. Now you must know many of the flaws as well and so I focused on the thing which felt more newer to me.
I don't think its specific to just my college per se, I might have the vibe that a lot of colleges are sort of trending along this line.
I hope so too. I have applied for some societies. I think that my github and projects and I have shared some of my forums usernames to them, I might get selected and find such group of people :-)
Now, I want to make stuff that I genuinely understand the deeper logic about. Most of my projects till now were problems I faced and so the result I cared about was the output.
But in college, I will try to focus on the process or the journey. I am making these projects this time to learn, which is why I am starting with learning programming languages. C programming language is also a course in first year so I am learning C using the second edition c lang k&r book.
Learning C could also help me learn C++ easier and I wish to learn it for DSA as there are some DSA projects which focus more on the time complexity and I have had some code which works but its time complexity is higher and the bottleneck of time complexity are sometimes some hidden things in python.
So for example, one time the code would work if one variable was a set rather than list because operating that particular function on set was much faster and it was the bottleneck.
I wish to learn both a flexible language like Python and also a fast language like C++. My passionate language is probably golang, (rust, maybe elixir). I just love golang and all these languages fit really nicely to be honest. Golang was created by the creator of C and it wanted to replace Python in Google.
I think its fun. I am doing more codeforces diverse set of problems than Leetcode though. I think that I want to do Leetcode as well in the future/in general :-)

WebHorizon? They used to be quite active here back in the day. I still have a VPS with them in Tokyo for years, and it runs very reliably.
Its has been going on this way for few years now after the introduction of NEP 2020, I was the first batch after it was implemented, I dont know if first batch is suitable word for it because my friends in other colleges were still taught based on old curicullum, so I think it was more like a pilot phase were they started it in few colleges initially and my college was one (I am lucky) !!
Our curicullum changed to CBME (Competency Based Medical Education) with AETCOM (Attitude, Ethics, and Communication), SGD (Small Group Descissions), SDL (Self Directed Learning), etc.... sessions to help students focus more on empathy and pratical aspects of medicine. It was bit unplanned during 1st year as even most teachers were having no idea as what they should teach or do in those sessions.
Btw.... it is not yet implemented in all colleges tho and would love to see colleges in small towns implementing it !! Happy that your college has taken the steps to implement new curicullum.... you should make good use of it. While many times it will sound basic atleast in mbbs (I have no idea in your field) like students used to feel who does not know how to speak to a patient, even I did it 🫠 but believe me sometimes basic things like these make a huge difference....
