I would be wary of any VPS that has >80% CPU steal. If it ever reaches 100% you lose the server forever
That's a fail-safe. They say if it ever hits 101%, you lose all your servers.
ServerHost's i9 / Ryzen 9 nodes are fresh so they have very little CPU steal for now. It will increase over time as they sell more of those VPS. Only ServerHost knows how many customers they will eventually pack into each node, but the track record is not good
For those particular nodes I wouldn't worry too much about CPU performance. Even if they oversell it should be pretty good

No worries, it's simple: A 20% CPU steal, for instance, means that there's a 20% chance that your CPU will be stolen by the owner of the service every time you connect to the VPS. That's the only way providers can stay in business, after all.
Jokes aside, high CPU steal happens when the host is overloaded (usually because they've sold more VPSes than their hardware is capable of running at full speed). A 20% CPU steal means that the physical core on the host is overloaded and you lose 20% of possible performance. A 0% CPU steal means the physical core is otherwise idle and all available for you. A 90% CPU steal means that you're only getting a tenth of the underlying physical core's time. Two VPS' virtual cores both trying to run at 100%, if allocated to a single physical core, will cause both of those VPSes to see 50% steal, for example.
Your LLM is exaggerating when it says it's a "real reliability issue", though. While CPU steal can indicate that a host is not well-managed and is often associated with less reliable hosts, all CPU steal causes in isolation is lower CPU performance.
I don't know about that. While i9 and Ryzen cores are very fast, the chipset has very few cores. I'd much rather a big blundering oversold Xeon or EPYC with 48+ slower cores than the same number of VPSes squeezed onto 16 fast cores.
I doubt that these nodes have enough memory capacity to be oversold as badly as their other servers. And honestly I haven't seen any host manage to oversell a CPU like 14900K/9950X/7950X to the point of actually having bad performance
Either way it probably won't be a issue for OP. It's more likely that any other part of the VPS would bottleneck before an oversold 14900K
That may be true, but it's ServerHost we're talking about here. They could probably give you baremetal with CPU steal.
