I am running this one MINISFORUM UN100P. They are generally great machines but this particular one has got very basic cpu - N100 [I think].

I use a BD775i SE as my main PC. Think I've had it for about a year now maybe. Works great.

Optiplex'ing 15+ years. Have few really nasty thin clients. Fans spinning and beg for quick death - ignored. Paste on CPU - rock solid. But it still moves around those bytes. Dirty bytes. No, there is no money for some fancy bs.

I have two MS-01s in my homelab, both with 96GB of Crucual RAM (pre-shortage buy). One has 2x4TB Crucial NVMe and one has 2x2TB FanXiang NVMe.
No regrets, unlike the HPE ML110 Gen11 which is a massive space heater and not much faster than the MS-01s, although I lose ECC RAM.
I use Rocky Linux 10 on mine, previously Rocky 9, but it wasn't an option in the poll. Debian is popular, but not everyone uses Debian or Proxmox. I prefer Red Hat-based distros myself.
ADDITION: If you can wait, maybe get the MS-03. Or the MS-01 at a discount.
I have two.
Minisforum UM890Pro 64GB which is temporarily downstairs running Windows just so I can watch youtube in the lounge. But the plan is to virtualise it and have it running 24/7 on some background workloads for my company while still able to use virtualised windows for youtube with the (internal) graphics card. This is an ultralight compact unit that I got intending to take while travelling so I can continue working, but the internal GPU isn't really any better than a laptop GPU and so I just travel with a laptop instead as it's more practical as I can use it anywhere rather than just my hotel room.
Minisforum 790S7 32GB plus RTX 4060 GPU, used as a second work PC currently only as a vanilla install to test packaged builds of software for my client. Actual intention again was to use this for my game development work while abroad. The GPU is OK, but actually significantly worse than the 3080 on the main desktop and the fan noise is loud enough that I don't want to use it most of the time. The innards of this is similar to the BD895i motherboard, although there are some differences. It's actually close to a year since I last plugged it in even, which is a shame.
The CPUs on both are pretty powerful, so I think the UM890 is closest to want I'd want on a travel PC if GPU wasn't important. The 790S7 is a nice idea, but it's actually quite heavy even though it doesn't take up much space in a suitcase (and also easily fits into my carry on rucksack) but the fan is annoying.
