  I wasn't referring to identity, I assumed no one used their real details even when buying a domain for regular use. I meant weak as in easiest to take down.

  Yes, your description is correct. Better, but more complex to set up. For small-scale projects I'd say option 2 is way easier.

  Yes, obviously. Cloudflare keeps a record of EVERYTHING.

  You should avoid that everywhere. There are tons of selfhosted analytics services which respect user privacy. And google is crap.

  Finally, in general, if you're a relatively small fish in the copyright infringement sea, do most hosts just kick you off their servers and that's the end of it, or are they often compelled to hand over your IP info, files, personal data to DMCA complaint filers or local authorities?

  In general, unless you host terrorism/CSAM/drug type of things, for copyright related matters you just get domains seized/disabled and servers banned.
  I would also discourage accepting any sort of card payments (kofi/BMAC/etc), because you start punching holes in your anonymity at some point.
