If you control own network you can claim absence, and can strengthen these claims by asking auditors to confirm that at a specific point of time (whenever audit was performed) there were no collection configured. It is trickier with upstreams, but if you have written agreement with them to not have it, this could put them at a legal troubles later. These measures aren't really a proof though, but involves more effort.
I think the better approach - development (or integration) of some (existing) countermeasures to make any Netflow collection less useful. But marketing pure Wireguard as a no-log solution triggers me a lot.
