What was the reason for requesting the documents from the client? And what might not work properly if the documents aren't provided? Is the hosting provider building its own database of documents? wtf

Based on the info from the link above, this looks like a huge red flag. The company is relatively new, yet they require ID verification and keep the documents on file instead of deleting them after the check.
I know nothing about the company or how they actually are in practice, but nothing on that page agrees with what you've just said.
It actually says "Your identity documents are processed through our trusted verification partner using bank-level encryption. We handle all sensitive information in full compliance with GDPR requirements." which suggests that they don't keep a copy of the documents themselves at all.
And again, with no idea how the company actually operates, just from the that page alone, I'd say it's one of the clearest privacy page styles I've seen (actually I note that their actual privacy page is the usual hard to read style), and just from how they address each point clearly explaining it, I'd say they at least know what their legal obligations are regarding KYC and GDPR. I'm actually tempted to copy quite a few elements from this page when I rework my own company's privacy policy - to me this is an example of how to do this well.
