Their server is eu-west so and judging by the blocked countries.. Netherlands would give best ping.
If you mean lowest latency to
polymarket.com, they use Vercel and this domain is Anycast instances identified in 48 countries and 81 cities according to ipinfo.io .I did a quick globalping measurement, and it seems evolushost @evolushost in Austria (not restricted country) seems to have the lowest latency. Next is xTom Japan so probably greencloud could also be an option.
However the latency is very minimal across many places due to use of anycasted cdn.

Well, it says EU-WEST-2 and if they are using Vercel = Amazon. So it looks like they are referring AWS EU-West-2 (London) and EU-West-1 is (Ireland). Both NL and IE are not listed in the geoblock list.

The lowest latency I got is from Interxion Zurich 1, which is offered by HostHatch. This also aligns with AWS data.
The IP address behind polymarket.com is 64.239.109.1 which is anycast proxy behind Vercel.
