There's quite a big price-gap between 3050 and 4060, since we only build new servers with them (i7/i9 13. gen or Ryzen 9900X)

Have you looked at vast.ai? I would recommend using that for a short term project. Very easy and you only pay what you use.
You forgot to mention that vast.ai do not offer dedi servers but very virtualized environment and running, for example, docker would be a pain.
OP doesn't talk about docker, but yes there are some limitations. It is just a suggestion. It's pretty easy to test it out. It might suit OPs needs, but it comes with limitations as you fairly point out.

The GPU is +$200/month though. So not quite the cheapest GPU server :-)
