You are able to use something like mydoman123.com on the order and once active under the domains in the hosting control panel add the correct one and remove the incorrect one.

Supply a temporary URL you can use so you can setup and test everything before updating name servers?
Allow you to turn off any spam filtering completely so you receive all emails and nothing gets sent to a spam folder or quarantined?

2 - it cannot be turned off completely but has filters ranging from low to extreme

Not sure about #1 but for #2 nope, i don't think so. In stackpanel theres a junk mail filter setting to set junk mail filter per inbox to extreme, high, normal or low but theres no off. Myself I just set to low, login to roundcube and set a rule filter, if To or From contain @ (basically all mails excluding bcc spam) > keep in Inbox. That rule seems to overwrite the stackpanel low junk filter setting to effectively turning it into off.
