Are there any EU servers that only support IPv6 that you can recommend?
The server I'm currently using doesn't offer ipv6, but my local network supports v6
So I'd like to add a server that only supports ipv6, they tend to be cheaper. Given the location, preferably in the Netherlands, which is the same location as the v4 servers I'm mainly using

Do you think you could provide the typical NAT based IPv4 shared port setup (a few incoming ports over IPv4, that'll cover SSH at least) as well as outgoing shared public IPv4 for non-IPv6 sites?
We had such setup in the past and it generated support workload that not fits the pricing of the plan, therefore we do not offer NAT VPS (besides our Storage VPS with NAT) anymore. Sorry.

You can setup your own NAT through another VPS that you have.
Both outbound connections and inbound ports are feasible.
Only limitation is that the MTU would be lower.
