I don't struggle with this, but it might be because I have an iGPU that supports HDR and I grab from release groups that do DoVi/HDR hybrids (aka DoVi with HDR fallback).
I do 4K remuxes too, but for the majority of releasing content I stick to 1080p encodes. At the moment having everything in 4K is too expensive in terms of storage. My primary Plex server (with primarily 1080p where I've been able to get that) sits at 114 TB.
Do you also do encoding on Plex server?
I'd personally avoid the smart TV's apps - they're not that good, and also track heavily.
Apple TV is the simpler solution - privacy-friendly and can play nearly everything.
Ugoos AM6 Plus / Ugoos AM6B Plus actually play everything.

Yeah my TV is old (I still love it thou) so I can't run any DoVi stuff, if there is no HDR fallback then I have to re-download stuff.
I agree also. Do you host it at home-server / NAS kind of thing? I am planning to build one also and I thought 14 TB disk would be enough but seems like not really.

Plex server will occasionally do some transcoding at least. Typically whenever my friends use some new device and forget/don't care to check the settings
Fair, but I can't force people to buy new devices just because I wanna use a different kind of software. Plex works just fine for the time being. I don't think Jellyfin has any features at the moment that would make me prioritize it over Plex, besides the fact it's an open-source software.
At the moment I have a ridiculously expensive set up via a provider. Basically throwing money in a fire.
Once I move and have more space for it, I plan on moving it to my home and hooking up a NAS with a ThinkCentre or something for transcoding with the iGPU.
Self host is an endless pit and money burning business, I am sure you will enjoy it!
Probably a stupid question, but how do you know if it is the igpu or cpu which is doing the transcoding? I'm running it on my ks le b now, and each time I stream 4K, the cpu usage is like 15-25% (E3 1245 v6)
Well your CPU should have built in GPU (I think E3 doesn't have) or you need external GPU for transcoding. Else CPU will have to handle this. I think your CPU is doing all the work there.

Plex will tell you if it's using hardware transcoding, but there are a few gotchas.
