My suggestion?
You are going towards uphill battle. Save yourself from frustration and use existing ones.
There's one thing that I'll never advice to self host and that will be mail server.
Simply not worth the pain and effort.

It's worth spending some time setting up dovecot/postfix/rspamd configs on stock debian, will outlast any of the 'mail in a box' type packages at the expense of a one-off time investment. You can add more as you need it such as sieve, full text search and outbound sending (better to just use SES though)
If you have some experience in mail servers and general linux, then Stalwart Mailserver is the best one I can think of. Nothing else comes close in terms of the fine grained control and the extensive features that Stalwart provides.
If no experience, I suggest mail-in-a-box which is designed from every aspect to be a solution for users with no prior mailserver experiences.
I would be very careful with stalwart. Written in rust, maintained by single person (?). Ultra massive stack with bleeding edge feature set. I would be afraid to use it in prod.

I have used 'docker-mailserver', it works great.
Adding to what user itachikonoha said, it definitely comes with issues and things needed to learn, but configuring the mailserver with a outbound relay reduced 90% of the stress I had.

Stalwart or emailwiz or slackermail based on iredmail on slackware distro which i'm personally using it. However for sending its better to use service such as mxroute or shared hosting which use mailchannels(dr.server) or mailbaby(hostbrr). Its just not worth the hussle for couple bucks per year.

@yoursunny is the best. That guy rules. He even offers IPv6 in Atlantis and on his datacenter in the dark side of the moon. Right now he is likely pondering on a new version of IP addressing space. Some say he might even be the one who came up with a draft for IPv10 back in 2017.

By far the Stalwart Mail gave me least headache than the rest mail solutions.

You’re competing with monopolies.
The best solution is to use a real hosting panel and disable the parts you don't need.
ISPConfig is a good solution for this. You can make a custom installation with the needed parts or disable them afterwards in the panel.
