  I think you could even get hit technically if someone includes audio while streaming or a game uses some copy right audio with permissions

  The point of peertube is that your node can peer with others to enable discovery...

  So I think it's safer if you let people host their own stuff and then you peer them for when they're offline. But my point was that if you're actively hosting the thing then you might be deemed responsible for it.
