But due to the nature of what I would be doing with the box (connecting to other VMs), I do see it as a security issue, where you could basically takeover any servers I connect to. May seem paranoid, but not something I could do.

Thing is simple, lower costs... If I own already LIR and have my own subnets, why should I pay for them to another provider 2+ eur per IP..
Same goes to the hardware... Cheaper is to colocate your own hardware..

At that point, wouldn't the datacenter company have a financial edge on hosting market? This seems to be the case for Amazon and Hetzner where both provide cloud and dedi servers and own whole of their stack
Actually, it is better to rent Dedicated if you are doing international business because you do not deal with situations like shipping. When the servers that come with cargo are poorly packaged, they sometimes arrive in very sad situations.
