Cost a little bit, but I use the Royal TSX app for any remote connection stuff. Can document and organise the servers in the app, and can capture credentials for at least automating the login to the server. Unsure if you can reveal the credentials or have it inject them if prompted, but maybe. I use SSH keys for remote access myself, but it will work in a seamless fashion with username and password if you want.
The app supports VNC and a bunch of other connection types too.
Also put passwords into my password manager (1Password), but rarely need to actually touch those. I’d use BitWarden if not 1Password, as a no cost alternative. I usually add some notes in my password manager such as the IP addresses, and that might be an option here too.

Out of curiosity, what's the SOTA of using SSH keys, like one key per server, one key per provider, or use a single key for all servers?

Depends on your risk tolerance. I do one per device (e.g. my laptop and desktop have a different SSH key, but I use both in all my remote servers).
The best way is to obviously use one key per server. Unless you have limited users on some servers, than it's just one key per user. For example I have a user that can only run rclone in it's home. Don't want to use the same key as the sudo/other users just in case someone does get the private key.
Even if someone does hack a server and get the key you have saved in the server, it can't be used to access other servers. But it's still better to not put all your trust into one key in case it gets leaked or cracked.
So if you really are paranoid, want to be super secured, or as a "just in case". Each user that can SSH should have it's own key.
Else one key is fine as the chances of it being cracked is really damn low.

how to manage one key per server? Meaning everytime sshing into server, I'll need to specific the private key path? Any software helping this?
if you look back like 4 or 5 pages we actually spent about half an hour going over this for windows to get my lazy ass to start using ssh keys
For putty, you can save profiles

With Linux you can just create scripts like
connectservera.shthat will run the ssh command that will point to the right key. Might be a better way for Linux, but it's a simple way.You can find some free time to watch it again, preferably with a friend. Watching it again feels like stepping into the magical and warm world of Totoro, which brings a sense of peace and comfort.
