I don't work at OVH but I suspect the database that tracks the stock availability is not updated exactly when each orders processed. That or it oversells a little bit to take into account orders that won't go through.
Which is why I think when we see these "restock", it's actually one guy who drops one server, and it stays in the inventory for a minute even though 87978987689 people order it at the same time.
That or @Neoon is right and it's a plain bug. The KS-LE-xxx in BHS were disappearing and re-appearing constantly in the API when this happened.
Fuck I missed out on the KS-A because I had the ordering function call commented out in my code ...
