thats a cloud environment so every infrastructure aspect is managed.
Or what do you mean?
On your website I can select up to 3 additional hard drives. That sounds like I have to manage my own RAID. But here on LET it sounds like it's managed, i.e. one large hard drive.

if you read more closely you will see there also the N+1 redundancy mentioned.
So the disks have N+1 redundancy.
If you want you can build on top additional redundancy with the multiple disks ( which makes actually 0 sense ).
The point on the 3 disks is, that every disk has its on IO limit. So by choosing multiple disks, you get effectively more IO limit.
Another point is that at least currently we dont like to provide very large single disks. Its simply a point of data security. The bigger the single disk, the bigger is also the chance of having issues with data integrity and features like snapshots.
