Personally I recommend hoodpay.io (payment gateway), they accept most tokens and have no KYC and if I remember right very low fees

Fine to use yes. I wouldn't put millions into it. For serious paranoid crypto setups you want the signing to happen on an airgapped, offline device (such as trezor or DIY).
Trust wallet has a central seedphrase which you can write down. While it doesn't display your seedphrases for the various blockchains in the app, they are all mathematically derived from the Trust seedphrase and that derivation code is open-source: https://developer.trustwallet.com/developer/wallet-core/integration-guide/wallet-core-usage
So if the devs disappear it will definitely be possible to derive your coin-specific seedphrases and import them into another wallet.
that kind of verification is a must if you want use these companies, you may find a way to "bypass" the verification, or you just forget about it.
if you do not use these companies, you can code youself a payment gateway, its' not that hard, https://btcpayserver.org/ , BTCPay is one of them, but they only support a few coins, and i think they do not support USDT ( i could be wrong, but i never see USDT option in BTCPay )
in my opinion , USDT ( different chains ) is a must if you want accept crypto, everyone in the crypto world has USDT
