Rack server suggestions (Dell PowerEdge Barebone)

I have previously opened a post about low end server suggestions, now I am looking at dell PowerEdge rack servers.
I am thinking of buying a barebone server second hand from places like eBay, and I need suggestions about which PowerEdge server I should get. I would probably just buy one or two servers. I only need a barebone server as I have spare parts such as cpu and ram.
Server are for general purpose, probably will use it for nas, some docker hosting, maybe some ai training.

I'm not sure if @LukeRhino is selling barebones only, but I would suggest him for such things in general.
Also, his suggestions are helpful.
You can look at Amazon, they offer SSD servers at a good price.

I thought the first digit is to represent cpu number group and second digit is generation
To save, I'd drill holes thru an old desktop computer case and put whatever motherboard in it. Mine looks pretty I swear. Then rack up the redneck way, if it's just for two computers it should look fine to the untrained eye (your dog won't mind). To save further, order internationally and beg the skirt for VAT reverse charge, then give the bill to the coffe shop downstairs (EU speaking). Do this legally of course.
If from the US, these things are cheaper and you wouldn't spend an hour with the hand drill to save on the cost of a case. But alas you wouldn't be able to save 25% in VAT benefiting from the reverse charge. Ah take that!

First digit is "size" of the server, CPU kind of, but more an effect of the "size" of the server.
7 is 2U, one or two CPU. 6 is 1U, one or two CPU.
8xx and 9xx are 'big' servers.. That is where you find the quad CPU systems.
The third digit is CPU brand.. 0 is Intel, 5 is AMD.
Yes, second digit is generation (minus 10).. The numbering format changed bit after the 9th generation... The third digit used to be tower vs rack mount. 1950 was 1U, 2950 was 2U, 2900 was the same server as a tower. Now it is R730 vs T730.
I suggested the 7x0 with 3.5" drive bays so you can use RAID10 using traditional drives for the NAS and RAID1 using SSDs for the rest.
