Sorry it says Unlimited Fair Use, what is fair use.

It's not unmetered. It write clearly "Unlimited Fair-use traffic".
Fair-use is far from unmetered or unlimited as they can suspend you wherever they feel that your consumption is too problematic or too expensive for them.
Wil they not send you an abuse email first ? I think they will not suspend your server out of the thin blue sky (link)

Some will warn you, some will limit your speed to few mbps until the end of the month, some will suspend you on sight and then there are some who will just terminate you.
Fair-use doesn't tell you anything about limits except that there are some limits.
There are always limits, but I don't think they will be enforced that hard there. 21fire.de also resell there services
It tells you also nothing about how many people use this 1Gbit/s line. Reasonable hard limits with the possibility to purchase more bandwidth in case of reaching hard limits are almost always a better choice than some unspecific "fair share", bla bla... sales gimmick.

No need to expect from others unreasonable/unsustainable offers. There's another aspect of all that, called stability. Stable business, stable service ... above some heavily oversold "unmetered" network.
