    What sort of CPUs are you looking for? e.g. E5-2690v2 (10 cores), E5-2650v2 (16 cores), E5-2673v3 (12 cores), E5-2650v4 (24 cores), we have many more too. If you could share an approx budget I can recommend the best option that fits.

    I wouldn't go lower than Ryzen 3xxx for minecraft server unless you want to be disappointed with low TPS value and terrible render speed.
