As long as the host lets you mount an ISO and run the installer through (No-)VNC partition layout is entirely up to you. Resizing partitions later on is also not impossible but kinda icky in my opinion. Simply disabling swap and not caring about the couple GB lost storage is obviously easy though and afaik it's also possible to use a file as swap space so changing partition layout might also be avoided entirely.
