You need to bind your IP to your KVM virtual machine in your OVH control panel.
You really did not provide any details to aid in troubleshooting. But I suspect the issue has to do with that their gateway IP is not within the subnet that they give you to use, so by default there is no route to it. For that reason their documentation adds a route to the gateway separately ("...route add IPv6_GATEWAY..."). But how to fix that in netplan, I am not sure.
So try adding a "routes" section under viibr0:
