Is there any provider around who offers configurable storage dedicated servers at OVH-like pricing?
I basically want to have SSD/NVMe primary drive and HDDs for storage.

I use Hetzner for this, you pick one of their base spec (either SSD or HDD, auction or not) and then you request additional hardware: https://www.hetzner.com/additional-hardware/
Mine comes with 2x 6TB HDD and I added a 1 TB NVMe SSD
